Zubair’s Fish Methi

We went grocery shopping on Fri after my check ups. Bought some items for Zubair’s Food.

Only Monday did he get to cook it. Cos only dalcha, sambal goreng, and sardine were available at home which we both dont really fancy.

We asked the Supermarket Aunty to slice 1 Red Snapper into fillet. Don’t want the bones. It cost $13 to get only 2 sides of fish. Wah piang eh!

The ingredients

I dont really know what Zubair put in this gravy cos he just threw in ingredients, tasted, adjusted, bla bla bla…

Besides, my duty was to only bring down the hanging laundry and wash utensils / cockery… Other than that, he told me to go and rest. How Nice. Felt guilty though.

So we had dinner past 11pm. tsk tsk tsk… then unfortunately, the square bread left 3 slices only, so i gave him lah. I ate with rice but they do don’t go together lah. The methi smell stuck on my fingers till the next morning. Yummy!

BISKUT NESTUM!!! Rough Recipe Included

As requested, here are the recipes:

2. Biskut Nestum. Biskut = biscuit / cookies….

My 1st sister and i finally got around to do some baking Monday night. We made a mistake of not thawing the butter earlier so we could only start at 9pm… then the blender refused to work so we had to pull out the old one… we finished everything by 12:30am!!!

This recipe is courtesy of my dear sister… who actually got it from our aunty but she adjusted the nestum : flour ratio a bit to get a nice texture. Makes about 4.5 trays full. Usually would be enough for whole of Eid celebration for us… well we dont really receive so many guests.

Ingredients:

400gm Butter

2 Eggs

1 cup Caster Sugar

1/2 tsp vanilla essence

3 cups Nestum (estimated)

4 cups Plain Flour (estimated)

Enough Egg Yolk

Topping of choice

STEPS:

1. Thaw Butter!!!

2. Mix butter, egg, sugar, vanilla essence together one at a time.

3. Add nestum and mix bit by bit. Then the flour.

We started to mix by hand when the mixture got heavy to be blended by the machine. Plus we got to feel the texture directly. This is the part where you hafta make a judgement and add either nestum or flour so the dough will hold. Flour will make it harder while Nestum gives more taste and weight but not so hard.

4. Roll the dough to about 1cm thick and press against your favourite metal/steel hmm… what u call it…. shape? LOL Our pattern of choice is the crescent.


5. Spread egg yolk on top and sprinkle your desired topping. Thousand and Ones or Chocolate rice or some stars even!

6. We baked for 12 – 15min in 150 degree celcius.

7. Cool and store!

8. MUNCH!!!

Zubair & Chicken Korma

Zubair is awesome.

On a whim, he decided to use our 1kg of Chicken Breast Meat (bought 1 month ago to make Shami Kebab) to make a main dish instead.

He browsed thru that Pakistani cookbook but found nothing interesting and decided to just cook his campak2 (literally means throw throw) way to make a Chicken Korma.

I left him to it (trying to sound liberal and non-hitler) peeking only once in a while to help bring down the hung laundry, wash the dishes and do some tasting.

To be honest, initially i was so scared to take a lick. Cos it was too… ghee-ish. I cldnt even see the actual gravy. but it had the potential taste. I commented, “Its too watery. What are we missing? What can we add to make it thicker?”

Z at first said, “No no its ok…” But i still insist its watery. Then he remembered, “Oh yah must add yoghurt!” Of cos we dont have Yoghurt at home. At first he said, “Nevermind lah, its ok.” But 5 min later, he came to me to say he’s going to pop down to Lai Lai the provision shop to grab some.

And this is the result!!

We started cooking at 7pm, then paused for prayer and stuffs and finished at 8:40pm. Somewhere in between, he asked me if i can make for him chappati and i groaned. (yes im so mean) i told him, “Should have said earlier so can prepare the dough first. Need to let it rest for 30min you know!” But i still went about to get the mixing bowl but Z stopped me saying no no its ok we’ll just eat with the normal bread.

But not 5min after he finally finished cooking, he said he wanted to go to Marsiling to get some chappatis. Then i remembered that my parents are there doing some grocery shopping so got them to buy 10pcs! (at $1.oo a piece!)

So Zubair’s tummy slept soundly last night.

And guess what? I LOVE IT! Kak Lily and Ayah too. Apart from their comments that its a bit too oily and salty. I LOVE salty haha. But really. I didnt even mind that its chicken BREAST as phobic as i am to it.

It still left astonished. Im soooo amazed at how he can decided to cook at a snap of a finger and then pull off with such ease, with no recipe to follow! In great contrary, i planned a week in advance to cook on a certain date, had to go shopping to buy the ingredients, mostly the spices, then hafta follow the recipe in minute detail! But he!! He!!…. *lost for words*..

I told him this and he said, “Yeah well.. after years of looking at my mum cooking in the kitchen while talking with her… And you must have interest, baby. But this is really my first time cooking such a grand meal.”

My hats off to you, darling.

Nasi Goreng + Sambal Udang

Sat, 7th June 08

Everybody is away for the weekend, so i decided to cook Zubair’s favourite dish. Sambal Udang. Since its funny to eat that one dish with just white rice… i decided to fry it.

Tragedies to follow…

I managed to get the instructions on the phone earlier from my mother who was in KL.

Fried Rice:

Sautee two scoops of blended onion, 1 green and red chilli each sliced in ur own style. Add a bit of water it wont get “kepul2″ or… chunky? To add salt at this stage

Then put in the cooked rice. Mix well… If u want some more colour pour some soy sauce.

Mishap one: Rice finished! Just manage to scrape around to get just a lil under 2 cups. Thankfully its enough.

Sambal Udang (Prawn w Chilli)

Peel the $5 worth of Black Tiger Prawn completely. Dont forget to wash thoroughly. Then pour hot water in the bowl to cook them.

Mishap Two: I didnt get the desired effect like the one at Bilal where it was sooo spongy it was almost transparent!

And here i cheated a bit cos the Sambal was ready made in the fridge. I just poured half of the content to the pan, added water, tomato and chilli sauces.

Mishap Three: Chilli sauce also finished. Only managed to get 1 spoon.

Thank god it came out alright still… And Zubair loves it! Yayyy *beaming*

It took just about 30min to finish cooking. We got 7pcs of prawn each.

I shouldn’t have finished ALL the rice cos i became so freaking full afterwards. and Z bcame hungry later w nothing more to eat.

Jussaemon the Cooking Mishap Waiting to Happen

Im following Wana’s and Fara’s advice to cook for him. After all, Zubair DOES miss his Pakistani dishes.

Fara gave me her own recipe. I dont know what’s the name but i call it Spaghetti ala Pakistan.

There wasn’t any minced mutton at cold Storage so Chicken it was. I didnt have the list of ingredients with me either so i sorta just buy the main items and hope the rest of the spices are there at home! LOL.


Mishap No 1: There’s no blended onion in the fridge. Since it’d be ridiculous to blend just 3pcs, i had to slice them myself. That’s when…

Mishap No 2: happened. The knife was so blunt i had to grip the onion and force the blade down. So much so that it slipped to one of my nails! Well lucky it WAS blunt and didnt cut anything.

Mishap No 3: Fara didn’t really give me the recipe in details like how many gms of this and that.. One silly question i had to ask my sister, “Do i hafta put oil in? cos she didnt say.” LOL!! How would i know man~ I’m such an amateur cook lah… :S Maybe this pot is non-stick so no need oil? Sis said just two spoons of oil.

Mishap No 4: When i sauteed the sliced onion (i dont like diced), it looked… horrible! I even told my sister, i wanted to start all over again. That means cutting the green chilli, chopping the garlic the second time round. But she assured me that it’s going along fine. BUt how come so dry one? I suspect Its bcos of the non-blended onion again.

Mishap No 5: In the middle of cooking, i just realised that i’d need curry powder also some jintan halus and coriander leaves something or other. Most i don’t have. I’m even sure if i had garam masala so i just put in this dubious looking red powder from a bogus container. Kak Ly said its Zubair’s spice so i took it to mean Garam Masala. Thank god there was curry powder in the fridge, but i made do without the garnishes.



But i suppose it turned out well… The onion is not to be seen already. I wished there were some more gravy though. And its super hot!

So what did i actually put in?

  1. 2 pieces of medium sized onions sliced
  2. 2 pcs of green chilli sliced
  3. 3 cloves of garlic diced
  4. 1 teaspoon of blended ginger
  5. Splashes of ground coriander LOL
  6. 1 tbs of Red Chilli Powder
  7. 1/2 tbs of that “garam masala”
  8. 1 tbs of Meat Curry Powder
  9. 400gm of minced chicken
  10. 1/2 tin of mushrooms cut into quarters
  11. 1pc of carrot sliced
  12. Water here and there
  13. Salt to taste (i put in like 2 teaspoon like that. haha)

I missed out:

  1. Coriander leaves
  2. Jintan halus (no idea what that is also)
  3. Peas

I substituted peas with carrots and mushroom as i loathe the former. Hee…

A few things i’ve picked up from here are:

  1. Salt is last.
  2. Since carrot is hard, you’d need to put them in together with the meat.. but if you like them hard, can put them in last.
  3. You not only CAN wash an onion… but you HAVE TO!!!

Only thing missing is Chappati!

Chappati Night

Although they really do call it ROTI.

That night, Mummy cooked Fried Fish in Tau Chow (Dont know how to spell) and Zubair can’t quite stomach it.

Coincidentally, we’ve just bought a packet of Atta flour a few nights before so Z busied himself in the kitchen. Zubair insisted that i should go back to playing my computer game (That time i was playing Build-A-Lot 2.) but of course i am the courteous, sensible Malay wife. It is not a nice scene to see a husband working hard in the kitchen while the wife is having fun playing on the computer in the room, na?

Besides, i didn’t want him to get a lashing from the rest for using the wrong cockery or utensil or making a mess of the kitchen. Even then we still got commented on two things:

  1. The pan was too hot already while Z hunt for other things before our first roti was in.
  2. The hung laundry. I only realised it was still hanging on our 3rd roti. Ergh… we can’t do anything right.

Our roti turn out to be like Tandoori Roti. Again. Crispy and not soft kind. It was really difficult lah. A check with Fara, she said the trick is to knead it with your knuckles and to lace your hand with oil so the flour wont stick! I sooo didn’t know the way you knead a flour can affect the end product!

Next question is: what will you eat your chappati with?

We searched the fridge and found sausages and Z said ok you dont worry, ill cook these. You just help me to cut them to smaller pieces can?

And off he went melting the ghee and sauteeing the onion. You read it right… GHEE!!!

The process looks nice… See the yellowish stuff? That’s the ghee!


And he added this special imported brand of red chilli powder for good measure. It’s like his garam masala for him.


Still looks nice… the black ones are supposed to be chilli.

But after 30 min, it got kinda black. overcooked lah i think. And he cldnt even finish his 5 pieces of small chappatis… he said they are hard! I think he went to bed still a bit hungry that night.

Picture Recipe – Shami Kebab

18th Feb 08

10 days after we reached Spore, we finally cooked our favourite Shami Kebab!!!

  1. 500gm Dhaal / yellow beans
  2. 1kg boneless chicken meat
  3. Garam Masala (you can find this in Indian provision shop)
  4. chilli powder

So first, you skin the chicken. Thankfully he hates skin too! Good for you, honey! Then dice into small chunks

Pour enough water to cover in the ingredients in the pot, along with desired amount of garam masala and chilli powder according to your hot & Spicy tolerance. Then boil till dry. Z tasted several time while it was boiling to achieve the required taste.


Somebody wants to learn cooking too! Well, she can learn from her Ummi lah!

Next is to mash them.

Really hafta mash till no chunks is visible, esp the dhaal. Otherwise, it will seem like you’re not a good cook! Took us about 1hr just to mash!!! We took turns, i mash first till tired, then Z continues till its refined.

Afterwards, shape them into flat rounds or whatever you prefer, dip in egg like you would to make toast and pan fry.

Easy Peasy Honey Cornflakes Recipe

I made 3 batches of Honey Cornflakes yesterday!!!
First was a trial set. Seemed ok so made another 2 batches at one go.
1 batch makes about 60pcs if you’re generous with the filling. I filled almost 100pcs of the 2nd batch to bring to Pak!
Either way, i think im not satisfied with all! The first one was plain no rainbow nor choc chip… its actually ok but they dont really stick together… Should have preheated the oven a tad longer.
The 2nd one, preheated the oven too long that it seemed to be a bit burnt tho the rest of my family insisted that its not. But the rainbow and choc hinder one from savouring the honey in it.
So there~
But here’s the recipe esp for Sandra. :D
HONEY CORNFLAKES
1 tbsp Honey
2 tbsp sugar
50gm butter
3 cups of cornflakes

1. Melt Butter, Sugar and honey over LOW HEAT till frothy. Keep stirring. And dont let it OVER HEAT as it will taste bitter. Thaw butter for about 30min – 1hr.

2. Pour the mix onto your cornflakes and mix them well…

3. Fill them into cups

4. Sprinkle with thousand and ones (the rainbow as it is called) or whatever that you like.

5. Bake for 5min in preheated oven at 160 celsius.

6. Leave it to cool properly before keeping it in an air tight container.

Selamat mencuba! That’s Malay for Happy trying! heheheh

Officially Certified to Marry!

In other words, “Aku dah boleh kahwinnn!!!”

Wait a minute! Oops, i forgot, I’m already married!

No lah.. just that we Malays have a saying that if u cant cook, u cant marry yet. And today, i have officially COOKED from scratch without any help nor supervision! Yayy

Browsing thru Zu’s Kitchen, i stumbled upon this Corned Beef Kheema recommended to eat with Chappati. I have always LOVED corned beef but mummy NEVER cooked it, so this is my chance! PLUS, we still have that ATTA flour we bought long time ago! LOL. and what better meal to learn other than my hubby’s fav n staple dish!

I warned mummy many times to let me do this on my own. She told me yeah she’ll be out when im cooking. But on the day itself, she took a nap. Fair enough. Good thing i went thru the method w mummy yesterday while buying groceries. She told me, that for the garlic and shallots, just take 2tbs from the blended one she’s prepared in advance. Ginger, 1/2 tsp. Lemon juice i can use lime also (limau kasturi). press them on top of a strainer.

I planned to do the Chickpea Chappati from Zu’s recipe but after going thru w mummy, we decided against it. As a beginner, i think i’ll start with a simple plain chappati first lah.

Sifting the flour.

Normally, its not required to sift flours in packet, but bcos the packet was left opened for some time, we tot it best to sift. (Plus, actually it said Best before sept 07! Shhhhh)

The flour mix is simple enough. Just add 75ml for every 100gm of flour. I made 500gm. Zu said to put the dough aside for 1 – 2 hrs, covered in cling wrap. So in the meantime, i fold the laundry, lest the cooking smell will stick to the clothes!

First problem encountered: How to open this Corned Beef can?

So complicated! Luckily, Kak Ly was around and she’s used this corned beef before. She told me to take off the key, remove the paper label, twist the key along the start point. Then it broke half way!!! After staring at it for some time, finally decided to use the can opener to stab around it. *dangerous!*

Second Problem: Err… where is the blended shallots and ginger and meat powder? Kak Ly showed me where. How come the shallots not as green as usual? and the juice sort of separated into two with the “hampas” or residue on top. *shrug* Meat powder is the packet right below there unopened. and ginger is in that small container at the side.

So there, everything’s prepared. In the transparent bowl is the corned beef already mixed with ginger and shallots. In the black bowl is the not so cubed potato. Mixed vege. and the meat curry powder with some water to make a paste.

Put in the Oil, spices, Meat, potato, mixed vege, curry paste, chilli sauce (lots of!!), tomato sauce. and this is where i made a mistake. i pressed the lime but forgot the strainer! I tot, “Ah nevermind lah, when they eat, they can put it aside on their own lah.” Okayed by Mummy.

While waiting for the potatoes to cook, and mind, it takes quite a while, i got the chappati ready.

Problem No 3: How come the dough stubbornly stick despite putting flour all over it? Could it be cos the dough’s too soft/lembik? Should we use the normal flour (tepung gandum) for this?

I finally had to ask mummy how. She said, no the texture’s fine. But put a brown paper on top of the chopping board (yes i was using the chopping board to roll out the dough! LOL), and dont press too hard.

And there you go… my very FIRST CHAPPATI!! Hooray!!!

Ammi will be proud of me i hope.


One thing u must know is, making chappati creates a hell of a mess!

At first, my chappati were very lopsided… Mummy said that we should turn the dough 90 degrees and roll it out on that side, so u can have a nice round chappati. but some people, dont need to raise the dough to turn it, just turn ur body and rolling pin!

Problem No 4: My dough is so soft n fragile that it cant help but stick on the paper. When it sticks, my nicely rolled out dough breaks/koyak!!! Sometimes, i hafta do it all over again, but if its not too bad, i just dump it on the pan.

It’s amazing how chappati doesnt need a single drop of oil on the pan to cook! While I like mine thin and crispy, Mummy like hers thick and soft! Darling, how do u like yours, honey?

I started cooking about 1pm. and finished at 3pm!!! Its the chappati that takes a long time! that 500gm can make round about 10 – 12 pcs, didnt really count tho.

There you go. That’s my plate of Roti n Kheema.
I was too famished when i finished that i only remembered to take a photo after i started eating already! LOL

Dont forget to clean the kitchen afterwards!

But hey, isn’t it only fair that the one who cooks get to rest? *cheeky smile* So Xubi, can you help me with these, baby?

So there… Since i’m already married… i hereby certify myself Able to Live on My Own. hahah See… now i can cook… I like to use the vacuum now.. and mopping is easy with the wet tissue on the japanese stick. Aiyah dont know what its called. And i already know that washing clothes is easy.

I just hafta overcome my hatred for ironing clothes. As long as u dont give me diff material like silk or whatever (that the crease just wont disappear!!!) and if u dont mind not having that line in the middle of ur pants, that ironing is manageable.

Also, i still hafta prove that i can take care of a baby on my own! Ergh… being the youngest one, ive never taken care of a baby before. Even for Syifaa’, tho i always play with her, entertain her n teach her stuffs, I wont know how to make her milk, nor change her diaper. OMG! How to bathe a baby????

Well.. that’s another chapter in my life, that is still mysteriously out there in the far future. haha..

Now, in the near future, or more specifically, this weekend, i hope to cook again! Im loving it lah!

Have watched The Wild, The Barnyard, X-Men 3 and Chuck & Larry while he was away.

7. Read 4 novels (AFTER finishing those 2)
Started Book 3 which Ayah bought for me – The Unromantic Orient By Muhammad Asad.

8. Practise cooking. Maybe i’ll try to make Peach Tart? heheh if not then Mee Bandung.
